Kitchen hood fire suppression systems are the contracting service of wet chemical extinguishing installations that automatically control grease fires originating from fryers-grills-cookers in commercial kitchens, inside the hood, smoke duct and cooking equipment. A hot oil fire (Class F) is a special hazard that splashes violently on water contact and climbs into the duct; a standard extinguisher therefore does not suffice — alkaline wet chemical forming a permanent soap layer (saponification) on hot surfaces, plus automatic gas cut-off, becomes mandatory.
